Must try: Paella with seafood
Bilbao is the name of a city in the Spanish Basque country made famous by Frank Gehry-designed vanguard-style Guggenheim Museum. But Bilbao is also the moniker adopted by Singapore’s latest Spanish restaurant and tapas bar located in adjacent corner units on the second floor of Triple One Somerset mall. You simply can’t miss the strikingly rustic façade of Bilbao’s retail space–which boasts a sumptuous display of imported Spanish produce including extra virgin olive oils, olives, fire-roasted peppers and wines, amongst others.
And if you chat with Umberto Vizcaino and Lisa Olson, the husband-and-wife team behind Bilbao, you’ll realise that they are also the dream team behind Solymer Asia Pte Ltd (“Solymer”)—the first company in Singapore to bring in Iberico ham–that distributes epicurean Spanish products to restaurants in Singapore.

Don’t say we didn’t tell you that Bilbao has one of the best paellas in Singapore. Like us, you’ll love those fluffy grains of saffron and seafood stock-steeped rice served with clams, shrimps, sliced chorizo and chicken bits ($22 for paella mixta). But if you prefer to graze on small plates with a jug of Sangria in hand, don’t miss the divinely-sweet fire-roasted red peppers ($9) stuffed with minced meat and shrimp in béchamel sauce and the herbed-up fish cake ($9), a Spanish take on otak minus the spice.
